What I Do
I Curate Wine For The Tables That Matter
Building a collector’s rotation, sourcing for an event, or setting the tone for a corporate dinner. I do the tasting, the thinking, the conviction. You get the selection that works.
For Your Own Table
Your name on the invitation.
Collectors
A standing or seasonal rotation, refreshed as the cellar moves.
Private Events
The evening built backwards from the bottles.
Parties
Enough of the right thing, and nothing anyone has to explain.
For The Company’s
When the bottle is doing business.
Corporate Dinners
A list that reads as considered without reading as expensive.
Client Entertainment
Something to talk about that isn’t the contract.
Team Events
Nobody left holding a glass of something they don’t like.
Why A Curator
Most Of Those Decisions Get Made Under Time Pressure
A good wine list is a series of decisions, and most of them are made badly and late. Too many bottles, chosen to be safe, poured in the wrong order. A curator takes the decisions off the table and leaves you the evening.
I look to the New World first, because that is where the same money goes furthest right now. I’ll tell you when it doesn’t.
How It Works
Three Steps, One Table
The Brief
One conversation. The occasion, the room, the budget, the constraints, and what the last good bottle was.
The Dossier
You receive a document, not a spreadsheet. Every bottle named, priced and sourced, each with the reason it is on your table — written to be said out loud, not recited.
The Table
For standing clients and private rooms: the service itself. Order, temperature, glassware, and someone at the table who can answer.

Tell Me About The Table
Six questions. It takes a minute, and it is the whole first step.
I read every one myself and reply within 48 hours. No deck, no discovery call, no sequence. Prefer email? hello@thirstyc.com
The Letter
It Arrives Most Thursdays And Asks Nothing Of You
No sequence, no upsell, no second email asking why you didn’t open the first.
